There are a lot of fabulous things about being Australian. Personally i think really blessed to call Australia home (& I really like the Peter Allen melody too).
Just what a privilege to live in a beautiful, secure, friendly nation. Whilst Australia doesn't have the loooooong culinary background a great many other countries possess, we are trying, and on Australia Day we make an effort to serve all of the Aussie meals fare simultaneously.
Some of which is dubiously ‘borrowed' from our Eastern Island of New Zealand, but in any event from the day of lamb, shrimps over the barbie, pavlova and lamingtons (& ale I suspect for many). Some might even have launched kangaroo into their Australia Day BBQ.

This year, we will friends for an Australia Day BBQ (funny as Kelly is American, but hosting the party!) and I'm bringing dessert, but before that, tonight, we are having Veronika & Alex in the Pumpkin House over for supper. They are Slovenian and this is going to be their 1st Australia Day, so we are celebrating early with them, and our beautiful neighbours (part Spanish & Dutch) tonight.
In fact come to think about it, one of the joys of Australian lifestyle is getting to know many from further afield!
On our menu tonight is decrease roasted calf of lamb served with last week's roasted pumpkin & Perisan feta salad then we'll have lamingtons three ways and pavlova 3 ways.
Before we reach the lamingtons, if you follow me on Facebook , you'll understand that I had formed a ‘pavlova palarver' last night. Firstly I tried to make a ‘healthier' edition of pavlova by using xylitol instead of sugar. Fail #1. It had been rubbery and spongey.
Tastes ok but not at all a pav to bring in to new close friends. I have tried a year or so ago to utilize coconut sugars and whilst it tasted caramely it had been quite flat, similar to fail #2.
Then I chosen full sugar sugar. I don't know what happened, maybe I didn't defeat the egg whites more than enough, perhaps the bowl wasn't dry more than enough, perhaps it had been the defrosted egg whites. The point is, it had been a sloppy, runny mess.
Cooked up ok, if you want skinny pavlova discs…
Then I put the decision out to those of you in Facebook. HEEELLLPPPP. The majority of you helpfully/unhelpfully advised to use a Kitchenaid not really a Thermomix. Helpful if I hadn't offered my Kitchenaid to be able to buy the Thermomix. Unhelpful because I no longer have a Kitchenaid.

I nearly chosen the hand held beaters but I had been determined to create it function. I cleaned the bowl with vinegar and dried out it totally. I converted the air conditioning on since it was therefore humid. I utilized fresh room temperature egg whites and I implemented this recipe to the letter.
Phew, I'm proud to say this WORKED!! Will post on social media marketing the decorated edition later on today (am considering mango & cream). I really like that it is the content with my failures that obtain the biggest replies
